December 18 The Amazing Red WineScenery Surounded by gentle music and soft light, male and female characters in a cozy and comfortable sofa, each with a glass of quality red wine of Pinot Some quiet and quiet conversation -So why are you so into Pinot? I mean it is like a thing with you. -Yeah. I don't know... It is a hard grape to grow. It's thin-skined and riping early. You know, it is not like a surviver like Caberrnet, which can just grow anywhere and thriving once it's been collected - no, Pinot needs constant care and attention. And in fact it can only grow in these really specific tactile coners of the world. And only the most patient and nurturing of growers can do it, only somebody who really takes the time to understand Pinot's potential can then cokes it to its fullest expression.. Then, oh, its flavor is just a most haunting and brilliant, thrilling and subtle one, antient on the planet... -... I discovered that I had a really sharp talent. The more I drank, the more I like what it makes me think about. I like to think about the life of wine. How it's a living thing... I like to think about what is going on the years when the grapes were growing, how the sun was shining... If it rained.. I like to think about all the people who tended and picked the grapes, and if it is an old wine, how many of them must be dead by now... I like how wine continues to evolve, like if I open a bottle of wine today, it will taste different than if I'd opened it on any other day, because a bottle of wine is actually a life... And it's constantly evolving and gaining complexity that until it peaks, like your 61 when it begins its steady, inevitable decline. And it tastes so good...
